Stuffed pork chops
Ingredients:
Pitted dates or prunes
Chopped apples
Sweet onion chopped fine
Apple cider (or juice)
Ras el Hanout (or you could use curry powder)
Pork chops - bone in and thick
Stuffing mix (I buy the cheapo store brand!)
Cut a slit in the chops
Wet your stuffing with some Worcestershire sauce and apple cider. I also add a little of the Ras el Hanout to the stuffing
Combine stuffing, onion, and fruit
Stuff your chops
Now, I take a round, deep dish. I put either rice or couscous on the bottom. Lay chops on top. Pour over enough cider to allow rice to cook. I sprinkle liberally with the Ras el Hanout.
Cover and bake on 400F for about 40 minutes, then uncover and cook til chops are done. (ALMOST done - then remove from oven and recover for 15 minutes)
They are fork tender and omg lol the taste is amazing.
You could also soak the fruit in apple brandy but I never have that lol!
You MUST put in enough liquid to cook the rice.
Sorry - I cook by “a little of this and a little of that!” So I don’t know exact measurements!
