Simply Meatballs


A simple quick and easy Italian meatball!



1 pound ground meat (1/2 lb. beef 1/2 lb. pork)

3 medium eggs ( 2 if large)

3/4 cup breadcrumbs

1/4 cup chopped fresh parsley

1/4 cup grated Parmesan Romano cheese

1 large garlic clove finely chopped

salt and pepper to taste


  1. Combine all the ingredients in a large bowl. Toss gently with your hands until meat has become thoroughly blended with all the seasonings. The mixture should be fairly moist.

  2. To form the meatballs, wet your hands in lukewarm water and then pick up a small amount of meatball mixture. Roll in the palm of your hands to form a smooth ball about 1 inch in diameter.

  3. Drop meatball directly into your sauce recipe. Or, if you prefer a crusty meatball, fry in approximately 3 tablespoons of olive oil, on medium heat for about 5 minutes. turning them to brown evenly. then drop them into gently into your sauce as they are browned. Meatballs take about 20 minutes to cook well. You can also cook them in the oven until browned.


NOTE: Makes 15-18 Meatballs
