Spinach Sauce


1/4 cup butter or margarine

1 10-ounce package frozen chopped spinach

1 teaspoon salt

1 cup ricotta cheese

1/4 cup grated parmesan cheese

1/4 cup milk

1/8 teaspoon ground nutmeg ( I don't use this )


  1. In a 2-quart saucepan over medium heat, in hot butter, cook spinach and salt for 10 minutes.

  2. Reduce heat to low, add remaining ingredients. Mix sauce well and cook until just heated through, DO NOT BOIL.

  3. Roll pasta in sauce, place on a plate and enjoy!
