Quick Meat Sauce
The total cooking time for this sauce is about an 1/2 hour. It can be cooked ahead of time, it refrigerates well for several days and freezes for several months!
1/4 cup olive oil
1 pound ground meat (1/2 pound beef, 1/2 pound pork)
1 small onion, chopped
1 garlic clove, chopped
pinch of dried basil or fresh basil depending what you have on hand, red pepper flakes, and salt and pepper to taste.
1 28-ounce can of peeled and crushed tomatoes.
heat the oil in a large skillet. When it is rippling hot, add the ground meat and start browning it with a wooden spoon. When partly browned, add the onion, garlic, and seasonings. Continue browning until the meat is a little crisp on the bottom of the pan.
Add the can of tomatoes and mix until the sauce starts bubbling. At this point lower the heat and add additional salt and pepper to taste, stirring well. If the mixture is too thick, add some water to smooth it a bit to your desired thickness.
Let the sauce simmer, uncovered, on low heat for about 20 minutes, and stir it often.
Serve over your choice of cooked pasta, or use as a topping for eggplant, lasagna, manicotti, ravioli, or stuffed peppers.
NOTE: Makes approximately 6 cups.
It needs to be washed(i know..... this aint freaking tiktok or insta ok....)but i bought these because they make easy to use squares for stuff like this... we dutch are big on the indo food. So i make a lot of peanut sauce... these make easy frosen squares.... also works with pasta sauce or soup and such.... i freeze those things in this and when they are solid i put them in a bag... i take out one or two depending on what it is and with how many we are....
